Hello everyone, just letting you know if you’re ever around in the south coast of the commonwealth drop your boy a message and I can finally let you what I’m cooking up this week. For real! It’s been a long time waiting.

NY Sirloin Cheese Sandwich

Sometimes I just want something as simple as a burger and full of flavor like a steak and cheese. Well, this past Sunday I had a half day from work and enjoyed it with a nice NY sirloin fresh from the butcher shop.

Pan seared to perfection in a cast iron pan and basted with garlic butter, this cut is very easy to prepare. Sear both sides on the stove top and finish cooking to preferred temp in the oven at 375F.

All you need to do then is toast some brioche buns, slice some cheese (cheddar and mozzarella), get some spicy pepper jelly, and requeijão (Brazilian cream cheese).

Potato & Carrot Casserole

Although the photograph above does not nearly depict a traditional cheesy and creamy casserole, that is because it’s fully intended to be a light meal. Yes! Call it murder to substitute the heavy cream with low fat milk, but, the idea is to have the same flavors and cooking technique in play which is really efficient to hosting a dinner party or meal prepping for the week.

Here, Yellow Gold Potatoes and Baby carrots get sliced thin then slowly cooked in the oven with a cheesy béchamel base sauce that is seasoned with garlic, fresh parsley, and Parmesan cheese. Spanish onions are nice touch as well.

Prepare to be delighted by these scrumptious meatballs co hosted with spectacle of vegetables that will blow you away. The flavors are out of this world, and, get this — no carbs yo!

The meatballs can be substituted with different kinds of meat like ground chicken, Turkey, or pork. Of course you can use impossible meat or tofu instead. It’s totally your choice but this dish can be easily turned into a vegan meal.

Orange Sauce Meatballs with Zucchini Noodles, Peppers, and Carrots.

A wonderful combination of an Italian staple mixed with an Asian philosophy of cooking where spicy and sweet flavors come together to create a savory experience that harbors a variety of vegetables into one serving.

Designed to be easily adjusted to a number of diets, including Keto & Vegan, this is bound to become another addition to your meal plan for the week. Though non-traditional in this recipe, the meatballs are done in the traditional method of par cooking them in the oven at a high temp of 475F for 15 minutes, followed by cooking them in the sauce for the remainder of the time.

The sauce is made from a reduction of orange marmalade, soy sauce, siracha, and water (use rum if you have it) along with sautéed peppers and sliced baby carrots. A wok or large non stick pan is required to sautéed the zucchini noodles in a garlic butter a bit of soy sauce salt & pepper, chili pepper flakes & fresh parsley.

Bacon Mediterranean Spanish Tortilla

Off the bet I will say that many will argue this recipe is far from a Spanish tortilla but closer to a quiche without the pie crust. However, the concept of thinly slicing the potatoes and making an egg base mix to encapsulate the flavors from the onions with the starchy savor from the potatoes is the inspiration behind this particular dish.

Instead of using the onions as the flavoring ingredient, a variety of savory components were used. Between sliced bacon being rendered down and the fat later used to mix the eggs with the milk, flour, and baking powder this dish has a smokey component that is hinted with chili pepper flakes and saffron along with fresh ground nutmeg to embolden those flavors. The bell peppers, spinach, feta, and grape tomatoes added layers of textured that blended perfectly with each creamy bite of the thinly sliced potatoes.

Potatoes are highly nutritious as long as you cook them the right way and if you balance your entire diet with fruits and other carb replacements like spaghetti squash & of course butternut squash.
They do possess a high amount of carbohydrate hence why the technique in cooking is highly important when it comes to delivering a healthy nutritional value. However controversial potatoes might be in a diet, the amount of fiber, Vitamins, potassium and magnesium the body gets in one serving can be undeniably beneficial to accomplishing both your fitness goals and overall nutrition.

The Cajun Italian who went to Russia came back with the story to tell in the form of a dish. Spicy & Bold, this dish is Determined to get in your belly 😂
However the beat your choosing for the day cooking this is bound to make an impression on a nice dinner night or as a perfectly balanced hearty meal for bulking season in your meal plan diet.
Here I’ve decided to make the Vodka sauce with the natural chicken stock from the cajun spiced tenders that were sautéed along with bell peppers and garlic in olive oil. One cup of water, two tablespoons of tomato paste, and, one cup of milk was added along with cherry tomatoes to make up the entire base for the Russian sauce. If you would like to make it with Vodka and cream just add one cup of each instead of milk & water. However, let the vodka cook off a bit with the chicken & vegetables before adding the cream. Add one cup each of cheddar & mozzarella at the end after sauce has been reduced for 20 minutes on low heat.
As you can see a Vodka Sauce does not need to involve neither Vodka nor Cream. However, some sort of cheese and milk will be required. For example, this can be vegan cheese if you would like to substitute the chicken with tofu or meatless chicken for a vegan dish. Although I do not have any experience making this dish fully vegan yet I’m sure you can substitute all of the components to make it at home.
