We love changing people's perceptions when it comes to sushi. Most think they won't like sushi, but they always do. Prior to Sushi After Dark, Lex waited tables at several different restaurants in town, never finding his true calling. After watching a friend roll sushi for fun, Anderson became entranced with the art of sushi. For two years he has experimented with different ingredients, putting his own Texas twist on the traditional Japanese style sushi. Anderson has rolled sushi for many well known artists in Corpus Christi such as A.B. Kane, La Conquista, and so on. Aside from private parties, Sushi After Dark caters at local bars and clubs around town. He continues to change the rules of sushi and therefor changing countless minds of people who think they would never like it.
