Coffee of the Week: Honduras Organic Reserva Pacavita
Honduras doesn't always get the spotlight it deserves. This week, we're changing that.
This organic lot comes from two farmers in the western highlands: Silvestre Vasquez, whose farm sits between two biological reserves on the slopes of Pico Congolon, and Joel Lopez, whose family has been farming the same land since 1865. Four generations of knowledge and care, poured into every harvest.
Grown at 1,400 to 1,700 meters, certified organic, washed processed, and hand sorted to strict European Preparation standards. The rich clay soil, mountain microclimate, and warm sun do the rest.
In the cup: MILK CHOCOLATE, ALMOND, PEAR, HONEY, LEMON, and LIME. Medium body, bright acidity, and the kind of balance that makes it easy to just keep drinking.
