☕ Coffee of the Week: El Salvador Santa Ana
Don't let the size fool you. El Salvador is the smallest country in Central America, but what comes out of its volcanic highlands is anything but small.
This week's coffee comes from smallholder farmers tucked into the mountainous slopes of Santa Ana, where rich volcanic soil and high elevations between 1,100–1,600 meters slow the growing process just enough to build something special. Growing classic Bourbon and Pacas varieties, these farmers hand sort every lot to European Preparation standards, fewer than 8 defects per 300 grams. That kind of care doesn't happen by accident.
The result is a beautifully balanced cup with notes of dark chocolate, caramel, dried fruit, almond, and red apple. It's smooth, medium bodied, and just bright enough to keep you coming back.
