A lot of people see the long lines, the sold-out signs, and the growth.
What most people don't see is the budgeting, planning, and sacrifices happening behind the scenes every single week.
Food costs continue to climb. Chicken prices alone have nearly tripled compared to what they used to be. The cost of fuel has become outrageous. Supplies go up. Every event has different costs. Being a mobile food trailer isn't as simple as showing up and cooking food.
One of the biggest goals we've had this year is keeping our prices as fair and affordable as possible for our customers. That means we have to be extremely careful with our inventory and cost of goods. We plan every event based on previous sales data, private caterings, public events, and what we can realistically afford to bring.
That's also why you see us sell out.
It's not because we want people to miss out. It's because we're still working through the challenges that winter brings to seasonal businesses while making sure we don't waste food or put ourselves further behind.
Anyone who thinks this business is easy money has probably never run a food business.
This industry takes skill. It takes commitment. It takes consistency. It takes showing up when you're tired, stressed, dealing with rising costs, equipment repairs, weather, and everything else that comes with running a small business.
But we keep doing it because we genuinely love what we do.
And most importantly, we love the community that continues to support us.
