Minty Girl~My version of that classic Girl Scout cookie. A rich chocolate cake with a minty cream filling with crushed cookies, my not too sweet vanilla buttercream in a dreamy shade of green to coordinate with the wedding colors, and topped with a chocolate mint wafer cookie! I heard the bride was a fan and a touch disappointed there weren’t any left at the end of the night!
