CANELA, the Spanish word for Cinnamon, but in my attempt to spice things up a little; I decided to switch it to KANELA. Oddly, every time I have a new baking project, sugar does not come into my mind; cinnamon does. As a typical Latin American/South American/Ecuadorean (mona) girl I grew up with a variety of aromas in the kitchen that my grandma would always use. Out of all the spices, cinnamon was always my favorite. Any signs of the sweet aroma of Kanela, meant that something yummy was about to be created in the kitchen, such as arroz con leche, morocho, natilla, bonuelos, chucula, and of course the famous CANELAZO, just to name a few. In other words, I relate KANELA to baking, cooking, my childhood, my grandmother, my family, the color of my skin, my taste, my likes, my country, my home...
