Most people know that USDA Prime is the best, Choice is in the middle, and Select is on the lower-quality end of graded beef. Then thereā€™s beef that doesnā€™t even meet the Select standard. But when was the last time a fast-food restaurant or taco shop told you the USDA gradeā€”or maybe the lack of a gradeā€”of the beef in your taco?
