At Opera House, we’re serving up the legendary Peking Zhajiangmian (炸酱面)—the ancestor of the popular Korean version.
The "OG" Origin Story
While many people know the sweeter, dark-sauced Korean Jajangmyeon, it actually traveled from Shandong, China, to Incheon over a century ago. The original Chinese style is a Northern classic that celebrates bold, savory, and complex flavors.
What Makes Ours Different?
The Sauce: Instead of the sweeter black bean paste, we use a rich, salty, and umami-packed fermented soybean paste (Zhajiang), slow-fried with pork to create a deep, caramelized flavor.
The Crunch: We serve it traditionally with a refreshing "rainbow" of julienned vegetables—think crisp cucumber, bean sprouts, and radish—to perfectly balance the richness of the sauce.
The Texture: Our thick, chewy wheat noodles are the perfect vessel for that savory goodness.
