Can’t get happy with the fall steak entree, but I think this might be the one:

“Tenderloin”-Pan seared grass fed loin w/textures of root veg: potato/parsnip pave, carrot/parsnip purées, cured and blistered baby carrots, peppered whiskey glaze.

A few more tweaks to the fall menu…….

“Beef”- pan seared tenderloin w butter confit root veg, parsnip puree, small salad of garden arugula dressed with herb oil and lemon, bourbon pepper glaze.

“Welsh Chocolate Fog” -we added a citrus gel, Montenegro ganache, and English honeycomb toffee

No resting on our laurels here at the Society. Winter Menu R&D:

“The Vitruvian Hen” - partially deboned hen smoked over pecan wood and pan seared in butter atop Peruvian spiced spaghetti squash “guts”, crowned with a wreath of winter spices crème fraiche and garden herbs and flowers, splattered with a sugar plum brandy gastrique.
