A Few Words About Kogetsu
There is one simple principle we have always believed in:
Food is something you put into your body.
For the past two and a half years, we have never cut corners when it comes to the ingredients we use.
There are always cheaper options in the market. Take imitation crab, for example. There are different grades and qualities, and the price difference can sometimes be two or even three times.
Yes, we could choose the cheaper option.
Yes, it would lower our food costs.
And yes, it could make our menu prices look lower.
But that is not the way we choose to operate Kogetsu.
From the beginning, we have tried to provide our customers with the best quality products we can.
Because at the end of the day, we are not just putting food on a plate.
We are putting food into your mouth.
That matters to us.
Sometimes we hear questions about why certain items at Kogetsu cost more.
We completely understand that everyone looks at price differently.
But when comparing prices, how many people actually compare the ingredients, the quality, the portions, and the prices at restaurants in places like Nashua or Keene?
As restaurant owners, we pay very close attention to these things.
For the past two and a half years, we have not raised our prices by even one penny, despite the fact that our own costs have continued to increase.
We have tried to absorb those increases instead of simply passing everything on to our customers.
We are not saying that Kogetsu is the cheapest restaurant.
We have never claimed to be the “best” either.
What we can say is this:
We do our best to provide quality food with quality ingredients, and we refuse to sacrifice that standard just to make a cheaper plate.
Every day, we listen to our customers.
We care about your feedback.
We care about what you think.
And we care about improving Kogetsu.
We are still learning.
We are still improving.
And every single day, we are working to make Kogetsu better.
So if you ever wonder why something at Kogetsu costs a little more, we hope you will also consider what is behind that price.
Because quality has a cost.
And for us, it is worth it.
