Mexican cuisine is essentially a fusion of two worlds. Pre-Hispanic Mexico gave us corn, chiles, tomatoes, cacao, vanilla, avocado, beans, squash and turkey.

After the Spanish arrived, they introduced pork, beef, chicken, dairy, wheat, rice, garlic and many Old World spices.
