Honoring Chauncey & His Legacy
As many of you know, from now until June 27, we are collecting monetary gifts for Chauncey’s children. His kids were his absolute life. On June 27, friends will gather for an amazing memorial ride in his honor, and we will present his family with your incredibly generous giving.
I’ve heard so many times that in the last four months of Chauncey’s life, there was such a glow in his eye. He was truly living his best life and doing what he loved to do—and one of the things he loved most was cooking!
When Paco’s Taco Express was given the opportunity to enter the local Vegan Chef Challenge, I wanted to do it so badly! But Chauncey kept telling me, "It can't be done!" I remember looking right at him and telling him that he was an amazing cook and could absolutely make it happen.
So, against his better judgment—and just to make me happy—he created our Vegan Torta! During the challenge, we featured all of our vegan dishes. Every single time a customer came in and ordered a torta, Chauncey would look over at me and roll his eyes, and of course, I couldn't help but laugh!

If I could talk to Chauncey today, I would tell him: "I told you so! You are an amazing cook!"
