Long time since my last post. Been in what I call Covid mañana mode. Instead of putting something off a day or 2, now weeks and months.
I am considering reopening after vaccination. At the moment I am waiting for an appointment everywhere.
It would still be limited seating. That is because I have no way to know if guests are vaccinated.
Have been having fun searching out wines for a new list. Maybe having too much fun. But I am excited about what I have found.
Anyway that is it for now. Will try to update more here.

Given the size or lack of here it will be difficult to do business. The lockdown doesn't help. And take out is not an option. No outdoor seating as well. I am not going anywhere so lets see how this mess turns. Due to many constitutional nutcases who want to do whatever the f**k they want and don't care about masks or social distancing I don't think it is going away anytime soon. Take care and be safe.

Plan is to open Thursday, June 4. Will be seeing what the interest might be for a few weekends and then decide to stay open for the summer or head to Seattle and Alaska.

Smaller menu - $38. I will be serving fresh pasta and great wines reasonably priced. Reservations in advance as before. So I will be able to tell everyone how many people you will be sharing the space with to allow you to decide if you are comfortable or not. I am looking into being able to accept debit cards but until then it will be checks or cash only, as usual.

Working on the entrance without doors if possible. I will be the only person working, cooking and serving with gloves and mask. That's it for now. Stay safe and be well!

Update... The obvious, like most people waiting this out. Problem is it will be a long, long wait. Without a total national lockdown and testing, testing and more testing this virus will not go away. I think it will probably go on and people will be dying into 2021 or until a vaccine becomes available. Thanks in no small part to an inept federal government and federal response or lack of.

My guess is there will be many restaurants that will not make it. I hope I am wrong. But even if reopened they will face social distancing in seating arrangements if they can make it that far. That will reduce capacity/revenue by 50% I am guessing. And then when a second wave hits maybe close again. It will be an ongoing mess.

So what happens at Cose Buone? I will be here I am certain, at least I believe I will. Unless of course Wonder Woman shows up. Then I am GONE!

For seating at that point I will limit it to 2 reservations, maybe 3 a night depending on how many in each reservations. There will be social distancing space between tables. It is also possible that for reservations of 4 or more that will be the only table that night. In a way not so different than what I do now. It will be fluid waiting to see how it goes but I will NOT pack them in.

Have been taking the time to try to build my wine list. Trying a few new wines each week. That has been the fun part. Also have been looking for good wines that have a great
price/quality. I never buy wines blind on a recommendation. I buy single bottles and drink them with a meal. If I like it I add it to my list. And I have decided to lower my mark up so I doubt I will have any wines over $40 with most in the mid $20 to mid $30's range. Trying to come up new food ideas and maybe reduce menu from 5 courses to 3-4. Just playing around with some things. Obviously if I do that the price will also come down. And with the downturn in the economy it might be a good idea. We will see. Any comments or ideas are welcomed.
