On the back wall of the Bombaywala & Co. restaurant, you will find a sampling of some of our favorite things from Mumbai. These pictures include popular people, sights, tastes, and even some childhood memories if you look close enough! A single post does not do the items on the wall any justice. So….stay tuned!! We will be doing a series of posts discussing the pictures in depth, and what makes them special to us, and Mumbai as a whole!

We are also extremely excited to announce our new series “Beyond the taste”. In these on-going series of stories, we will be exploring some of the less culinary aspects of Mumbai. This includes popular tourist attractions, hidden gems, and some of the overall culture of the city. As you know from our posts, every dish has a history behind it. Dahi Puri is a Mumbai native snack that is sure to take your taste buds for a spin! The puri’s at Bombaywala & Co. weigh in at a whopping 2+ pounds. The chutneys used in the dish are as always, made fresh with care and attention every day. Furthermore, the recipe used at Bombaywala & Co. is original and authentic.
Now, a little bit of background about your next favorite dish. Dahi Puri, like many Mumbai native foods, started out as a roadside snack. There, the dish was served in roadside carts alongside the street. Then, the dish slowly made its way to snack bars, and even to high-end restaurants in the city. Eventually, the dish would become a world-wide favorite of many. Dahi Puri, is essentially a type of chaat that utilizes ‘puris’ which are a deep fried bread made from unleavened whole-wheat flour. You may recognize puris from the popular dish ‘pani puri’. In Dahi puri, the puri’s are filled with potatoes, tomatoes, onions, green chillies, coriander leaves, sweet tamarind chutney, green chutney, and other spices. The other principal ingredient is in the name: ‘Dahi’ simply means Indian yogurt! The combination of these flavors become an explosion of a plethora of flavors in your mouth. Amongst other admirable masterpieces that are inside the restaurant, it is particularly difficult to ignore this incredibly colorful and detailed art piece. This mural runs an entire wall of the restaurant so you cannot miss it. This artwork was created in conjunction with a sculpture artist based in Pune, and it encapsulates the rich culture and history of Mumbai, and India overall. There are so many aspects of Mumbai lifestyle in the mural that it will take you more than one visit to truly admire it. The mural even includes some clever easter eggs. On the bottom right we can see and his friends engaging in some rather youthful activities... This mural is going to be a recurring series in which we will take the time to do a deep dive into some of Mumbai’s iconic spots, activities and culture.

Aloo tikki chaat is a tasty, flavorful, and vegetarian Indian snack with a hint of every flavor: sweet, sour, salty, and savory. As always, we make crispy tikkis from scratch at Bombaywala & Co. and all the chutneys for the dish are made fresh daily (sometimes twice a day)!

Aloo tikki is a potato(Aloo) cutlet (Tikki) served not only in Mumbai, but all throughout the streets of India. The dish in fact originates on the streets of Old Delhi, where it is sold in street side stalls and carts. The word chaat comes from the Hindi word chaatna, which directly translated means to lick. In context, it can be better understood as licking one’s fingers after a delicious meal. Chaat is essentially a mixture of many different ingredients including but not limited to coriander, sev, and dahi. Thus, Aloo Tikki Chaat can be fully translated to savory potato cutlets.

As opposed to regular Aloo Tikki, in chaat form the dish is essentially a mixup of multiple different ingredients. It starts with the potato cutlets which are then mixed with coriander, chickpeas, and sev (tiny fried chickpea sticks). This combination is then topped off with spicy and sweet sauces as well as yogurt. It is typically served hot alongside mint and tamarind sauces. Overall this vegetarian recipe (with much regional variation) contains potatoes, green peas, coriander, chickpeas, yogurt, and various spices for flavor. As noted earlier, due to the immense popularity of this dish throughout all parts of India many regional variations exist. For instance, in Mumbai this is often served with spicy curry and various chutneys, however, in more southern parts like Bangalore, the dish contains more coriander in addition to an assortment of different chutneys. The variation you can enjoy at Bombaywala & Co., is based on the Aloo Tikki found on the streets of Chandni Chowk, in Old Delhi with (of course) a mix of Mumbai style.

Ganesh Chaturti is a Hindu Festival that celebrates the arrival of Lord Ganesh down to earth from the Holy Mount Kailash. This festival has been publicly celebrated for nearly 400 years! Ganesh is the often known as the romover of obstacles and the God of success. It is believed that in the 11 days of this festival Ganesh comes down to Earth and brings happiness, wisdom, and property to all his deities. It is also celebrated as the birthday of Lord Ganesh. During this festival, people celebrate by creating clay recreations of Ganesh and chanting prayers and vedic hymns. In addition, people prepare and offer some of Lord Ganesh's favorite foods including Modaks, Ladoos, and many other sweet delicacies. On the last day of this 11 day festival people immerse the clay idol of Ganesh in water to bid farewell to his trip down to Earth. Banta Soda is a refreshing summer drink that offers a spicy, tangy, sour and savory kick to your taste buds. As always at Bombaywala and co., the spice blend used in the drink is made in-house and from scratch by our experienced chefs.

Now to get into the history. Banta soda, is also commonly referred to as Fotash Jawl and Goli & Goti soda respectively. As with many Indian food items, the differentiation in names usually lends itself to regional variations. The drink gets its name from the marble in the Codd-neck bottle. The marble in Hindi and Punjabi is known as the banta, goli, goti, kancha, etc. Hence the names, Banta Soda and Goti Soda - as the drink is known in North India, and the Goli Soda - as the drink is known in South India. The Codd-neck bottle was designed by Hiram Codd in 1872, and was immensely popular in the British Raj. The purpose of the bottle is to specially serve carbonated drinks. Today, Codd-neck bottles are only really produced in India for Banta soda, and Japan for Ramune. The pressure created by the carbonated liquid seals the bottle by forcing a glass marble up into the neck of the bottle where it snugly locks into a rubber gasket. Opening the bottle by pressing on the marble thus releasing the pressurised gas is seen to be a fun experience.The drink is easily available at street-sellers, known as bantawallahs, at prices ranging from ₹5 (7.0¢ US) - ₹30 (42¢ US).The drink is sold in glass tumblers and plastic cups. Due to the continued popularity, the bottle and drink have become part of Indian popular culture. The drink, which is highly in demand during April-May summer months, is often sold mixed with lemon juice, crushed ice, chaat masala and kala namak (black salt) as a carbonated variant of popular traditional lemonades shikanjvi or jal-jeera. Perhaps the most interesting fact about Banta soda is the following: Prior to India's independence in 1947, the bottles were banned in several cities during the Indian independence movement as the Indian freedom fighters used to add chuna (calcium hydroxide) to the soda bottles in order to make improvised mini cannons.
