95% of the items on our menu are Home-Made. Of course, all the BBQ is made right here. We also have home-made corned beef for Rueben Sandwiches and Corned Beef Hash, home-cured bacon, fresh-cut fries (reg and sweet tater), onion straws (breaded to order), fresh-ground burgers, fresh-cut salads, chicken tenders (breaded to order), deep-fried pork tenderloins, as well as our cole slaw, tater salads, beans, chili, among others!

In order to cook BBQ, your cooker should at least operate correctly. When it doesn't, it may be no small matter. When the high-temp bearing on your rotisserie goes bad, it does require getting inside the cooker. And it takes hours. I've now been inside this Ole Hickory Pit 3 times and Forrest Schoenberger 1 time in 25 years. It's not a clean job. But it sure feels good when it's all done! Gotta run tomorrow for some supplies, then hopefully be at Family Center Farm & Home on Thur and Sat. After that, it's all prepping for Paola Roots Festival on Aug 28/29 next week!

This may not seem like anything special, and it isn't, but it is out of the norm. For me at least. Several weeks ago my supplier slipped me some BIG spare ribs by mistake. I threw them in the freezer and didn't notice til the other day. They are too big to handle on the food truck. I cook St Louis style 95% of the time. Smaller, easier to put in the warmer. And I never wrap them. I wrapped these spares after 3 hrs on smoker but not before I soaked them with sauce and cooked them 2 hrs longer. So they are tender and juicy. And now cold. So I have 6 slabs of wet ribs. I'll pair each Slab up with a pint each of Baked Beans and Baked Tater Salad for $35, pick up here at BBQ HQ. You just have to heat up. Pay at pick up. Shoot me a text 913.634.1538 and we'll set up a time you can get them. When they are all gone I will update this post indicating so. It's too hot to go hang in the food truck, but I do plan on going out later in wk, probably Fri/Sat.

Provided the rain doesn't get in the way, we'll be at the Family Center Farm & Home Paola today 11-2. If all goes according to plan, we'll have some more Mayberry Eggrolls.

Friday we'll have plenty as there are bigguns on the vine and ready to pick. In the morning. Weather permitting, tomorrow and Friday at the Family Center Farm & Home Paola, 11-2.
