Another update on chef Nick….

Yesterday he went to his new Primary Care Doctor….. got all sorts of blood work done….
(Awaiting results)….
Essentially the short term of what we know so far is that he has small vessel ischemic brain disease. This disease is responsible for at least 20% of all strokes and are the second contributor to dementia after Alzheimer’s disease ….Clinical manifestations range from acute, higher risk of stroke, to chronic, in the form of slow deterioration of cognitive functions. There could be a number of reasons why it happened… but we are remaining hopeful that whichever the reason, we can slow its progression as much as possible!

So no, He didn’t hit his head. There is no injuries. Apparently the brain can become damaged without an injury. As to the “why”… we don’t exactly know yet. At least not until we get with a specialist (hopefully they will have some solid answers) but basically some lifestyle changes will help benefit him in a way of slowing it down and any more potential damage….

As with any and all health situations, obviously that’s always beneficial to do anyways…. Especially as we become older and wanna be here as long as we possibly can with and for our babies!!

We really truly appreciate each and every one of you all soooo much! We truly know the best people! Thank you from the bottom of our hearts! Those of you that have prayed for our family, for strength, healing and peace…. those of you that shared our post in your support and those who were able to give financial support as well…. All of you are truly amazing!! We are blessed to have you in our lives and part of our Ohana! 🥲

The hardest part is the unknown for sure. Not knowing if we will be able to continue to do things the way we normally do with the food truck, or if my job will be able to provide all that we will need especially if I have to travel out of town to take him to the specialists… and Not knowing if there is any thing that even can be done or not…

Again- Thank you all for being there for our lil family! I know we have a HUGE support system and that’s one thing we DON’T have to worry about! We had all sorts of people reach out with offers even from our own customers to help with transportation if we needed it, my Aunt & Uncle sent us anointing oil, so many people offering if we need anything just to reach out….. I can’t tell you how much that means to us! Our family’s world changed last night when we were told that my husband has acute permanent brain damage. What started as a normal time in our lives quickly turned into hospital visits, testing, and now an uncertain road ahead.

He is not just my husband, he’s the person who keeps our family steady, and a strong part of our community. Over the years, we’ve volunteered with search and rescue efforts and worked alongside the Red Cross, always trying to give back and help others when they needed it most. Now, we find ourselves in a position where we need that same support.

Right now, his condition requires ongoing medical care, monitoring, and support as we learn what life will look like going forward…. Because of this, I will need to take time away from work some times to care for him and be by his side. This means we are facing both rising medical expenses and a loss of some income at the same time.

We will do everything we can to keep pushing forward. As much as his health allows, we’ll still be out with our food truck serving that mouth-watering BBQ and staying connected to the community we love. But there will be times when we simply can’t be there, and that uncertainty makes things even more difficult.

Our faith is a big part of who we are. We are Christians, and we truly believe the Lord will help carry us through this difficult time. We are holding onto that hope every day.

We are asking for help to cover:

* Medical bills and treatments
* Travel to appointments and specialists
* Daily living expenses while I won’t be as available to work as much
