A lot of people are craving Chinese food since many Chinese restaurants have closed during “lock down”. So….make your own! Smoked Asian glazed baby back ribs.
One rack of baby ribs
1 TBL Olive oil
45/45/10 coarse salt, coarse pepper & paprika = rub
1 TSP Sesame oil, 1 TSP Mirin, 3 TBL Ah So = glaze
Apple cider vinegar
Pre-heat smoker to 225
Remove silver skin from bottom of ribs. Lightly coat ribs with olive oil and massage rub in on all sides.
Smoke ribs at 225 for 3 hours. Remove ribs, place in aluminum foil, spritz with apple cider vinegar and double wrap tightly. Place back on smoker for 2 hours. Combine sesame oil, mirin and ah so. Remove ribs, unwrap and brush with glaze. Place back on smoker for 20 minutes to 1 hour depending on desired doneness.
Can be made in oven or grill as well. Mirin, Ah So and sesame oil can be found in the international aisle at any local grocery store.

Here’s a great side dish. Smoked street style Cauliflower.
Ingredients
1 ½ large heads fresh cauliflower cut into florets
3 Tbsp. olive oil
½ tsp salt
½ tsp chili powder
¼ tsp. paprika
½ tsp. garlic powder
In a disposable foil pan drizzle florets with olive oil and mix with seasoning. Smoke over lump coal & pecan wood chips for 30-45 minutes or until florets are tender and caramelized.

For the Sauce:
¼ cup mayonnaise
¼ cup sour cream
¼ tsp. chili powder
¼ tsp. cumin
1 clove garlic finely minced
¼ tsp. salt
2 tsp. lime juice
1/3 cup finely grated Romano cheese

Dollop sauce over florets when they come off the grill and eat hot or mix sauce with the florets, refrigerate and enjoy as a smoked cauliflower salad.

2 lb beef tenderloin with a simple 50/50 salt & pepper rub. Smoke with hickory and pecan at 250 until 125 IT. Reverse sear 2 minutes per side on 600 degree grill. Rest 15 minutes for final IT 135-140.
Gorgonzola Sauce
2 cups heavy cream
3-4 ounces crumbly Gorgonzola cheese
3 Tablespoons freshly grated Parmesan cheese
2 Tablespoons minced fresh flat-leaf parsley
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
In a saucepan over medium-high heat, bring cream to a boil. Reduce and simmer 15 minutes. Remove saucepan from heat, add all ingredients. Whisk rapidly until cheeses melt.
