CHORIZO, homemade from Impossible Beef and a lot of spices especially dried Pueblo Chili, smoked paprika and freshly ground cumin seed.
Vegan or vegetarian Tostadas. We make these for Lunch in 10 -14 minutes.
Mi Rancho thin corn tortillas from a family owned company in California. They are the best unless you make them fresh.
Lunch for my wife is always a pleasure.

Gene’s Swedish, or some people like to say, Norwegian gravlax presentation with a twist.
Chef Gene’s troll caught wild king gravlax. Caught on a Thursday from Alaska, cured with mandarin Vidalia onion, Himalayan salt, raw sugar, deal, frond, Italian parsley, pink and black peppercorns served with sourdough boulangerie Crostini and Dijon dill crème fraîche. Served 48 hours later including a 36 hour curing. Paired with a French Vielles Vingnes vin 2021 Chablis

Ghormeh Sabzi!! Zoomed this today for my friends and colleagues of the Pikes Peak ACF.
It’s not just a GREAT accompaniment its a MEAL. I prepare it VEGAN a lot this one with Saffron Roasted Chicken but the maximum is Colorado Lamb Shoulder braised inside or Leg roasted slow and simmered inside this perfect dish.

Vegan smoked paprika, cumin, mint seasoned plant based for wife and I ground Colorado Lamb shoulder and loin with same seasoning for my DELICIOUS burger with fresh baked griddled with coconut butter Brioche rolls.
Organic Garnet Sweet Potato and Yukon Gold shallow fried in Safflower and coconut oils. Vidalia caramelized Onion and roasted jalapeño. Organic heirloom tomatoes and Mustard greens. Last of the Grandma Kalesti’s spicy Polish Pickles recipe from last fall.
Ice Cold Holidaily GF Blond Beer
We were hankerin for a burger, but it has to be how I roll.
