THE FIRES ARE LIT.
OUR DOORS ARE OPEN.
We closed for the summer and went to work. We look forward to welcoming you.
This is Kaiser Grille Chophouse, the wood-fired chophouse of Palm Canyon. The same corner since 1992. The same family. Three generations of butchers.
We brought our butcher's room to the restaurant forefront. Every chop, every steak is aged, broken and cut by hand, in our own room.
Our custom live-fire kitchen around a 108-inch oak-and-charcoal grill, with four rotisseries, and a 750° almond-wood dome.
We refreshed the dining rooms.
And we opened The Block & Barrel in the front of the restaurant — a full bar, Sito's Table, the Fireside, the Salt Side dining areas, the Sidewalk, the Canyon Terrace outside, and the block by the ounce. The daily place to pull up and stay awhile. One house, two ways to eat in it. Same block, same fire, same butcher, with energy, no reservations, and pricing you can enjoy daily.
Not a reinvention. A return to our roots and our heritage.
Two standards run underneath all of it.
The Ranch Standard — ranch and breed-specific, farm and ranch verified, pasture-raised, without added hormones, antibiotics or growth promotants. Our primary beef is Brandt: one family, one ranch, one breed in the Imperial Valley since 1945, on a 100% vegetarian diet for 300 days. We dry-age 42 days at a minimum, and break whole primals by hand in our own room. We cut on readiness, not on a calendar.
The Water Standard — fresh and pristine, wild or responsibly raised, sourced to Monterey Bay Aquarium Seafood Watch guidance. The day's fish is noted nightly.
