Our w**e director is still in France.

Farouk Chaabi spends his summers in the Loire Valley. He comes back in October, and what he brings with him goes on the list.

While we were in Ontario, Chef Trilby flew to Paris and London to eat at the best tables in both cities.

She did not go for recipes. She went to sit in rooms that could not be anywhere else, and work out how they do it.

That is what she is bringing back to our table this season.

I ate Michelin-star every night for thirty days. Bill chose the w**e.

French countryside. Burgundy. Montreal. Quebec City — and in Burgundy he went after the best the region had.

Then I spent the next month in Ontario putting that technique against ingredients that had been out of the ground an hour.

That's where we were in August. It starts arriving on the menu Wednesday, September 2.

One hundred people. A farm-to-table feast in Ontario. My stepson's wedding.

Chef Trilby and I put it together. I built the menu, sourced every ingredient, costed it, planned the storage and the equipment list, and had all of it standing ready for her to cook.

French technique, ingredients picked that morning, a hundred covers nowhere near our own kitchen.
