What an INCREDIBLE time at the Palisade Peach Festival! 🍑🎉

We had the honor of bringing together the head chefs from Fidel’s Cocina & Bar and Josephine’s Italian Restaurant to showcase one of our favorite local ingredients: Palisade peaches!

🍑 Chef Dustin from Josephine’s created a Peach Crostini with goat cheese, fresh mint, and a baked parmesan crisp.

🌮 Chef Armando from Fidel’s brought the flavor with a Carnitas Peach Taco topped with peach chamoy and cilantro.

Two chefs, two completely different dishes, and one amazing celebration of Palisade peaches! A huge shoutout to everyone who worked behind the scenes to make this year’s festival happen. We had an amazing time and loved getting to share these flavors with all of you. ❤️

Our second PeachFest dessert special is here, and it’s one you’ll want to save room for. 🍑

Our Peach Panna Cotta features creamy coconut panna cotta, sweet peach compote, and a toasted cashew mix for the perfect finishing crunch.

Peach season doesn’t last forever, and neither will this dessert. Come get it while it’s here!

Join us Saturday, August 22 at 12:30 PM under the Peach Cuisine Tent for “Essence of the Peach: East to West.” Chef Armando Reyes of Fidel’s Cocina & Bar will be joining Chef Dustin Deprospo of Josephine’s Italian Restaurant for a delicious celebration of Palisade’s favorite fruit.

Join us from 5:30–8:30 PM and get the peach celebration started with Peach Margs, Peach Soda, and House Margs. 🍹 Whether you’re coming for the peaches, the drinks, or just a great night downtown, make sure Fidel’s is one of your stops!

🍑 PALISADE PEACH SEASON IS HERE! 🍑

We have an AMAZING couple of weeks ahead at Fidel’s Cocina & Bar, and we’re kicking things off THIS THURSDAY! 🙌

🍦 Ice Cream Social | Thursday the 13th | 5:30–8:30 PM
Come hang out with us on the patio! We’ll be pouring house margs, peach margs, and peach sodas.

Additionally, we will be launching a few seriously delicious peach specials to get us excited for the festivities ahead. 🍑🍹

Then it’s time for PeachFest 2026 on August 21st & 22nd! Jeff and Mando will be joining the fun with a special demonstration on the 22nd at 12:30 PM, you won’t want to miss it!
