For those of you who have been wondering about the little blue house on Saint John’s Ave, here is our story:

Darlene’s began long before we opened our doors. It started in Chicago in 2014, when two people with big dreams and even bigger hustle crossed paths: Jon and I met!

Back then, Jon and I were carving out our own lanes in the city. His in real estate and mine in F&B. Together, we opened a small brokerage for rental properties, juggling showings and paperwork while I continued my fast-paced career with Jägermeister. I had been in the food & beverage world since 2008, and my love for hospitality never faded. If anything, it grew.

By 2022, the pull toward creating something in the restaurant industry became too strong to ignore. So we packed up, headed south, and made a bold new start in St. Augustine, Florida, where we launched our second business together, Bacon and Bubbles Food Truck. For three years, we served up great locally sourced food, good vibes, and a whole lot of personality, building a loyal following along the way.

In 2023, ready to plant deeper roots, Jon and I bought a house in Palatka, FL, a community that immediately felt like home. After three full years on the road in a food truck, we knew the next step that had been calling us for a long time, a brick and mortar. That dream formed and we named it Darlene’s, opening in August of 2025.

Named in honor of my mom, Darlene, whose love, strength, and spirit sparked the entire vision, the restaurant is a tribute to the lessons learned during her battle with esophageal cancer. Through that journey, Jon and I discovered how many harmful chemicals and fillers hide in everyday foods. It changed the way we thought about eating and inspired the foundation of our menu: quality ingredients, zero fillers, real food made with care. We chose to set up shop in Palatka to be on the forefront of having fresh accessible food in a world surrounded by fast food and drive throughs.

Through every move, every challenge, and every big leap of faith, our families stood behind us, offering unwavering support, encouragement, and strength that made this dream possible.

Today, Darlene’s stands as more than a restaurant. It’s a love letter to family, community, and fresh beginnings.
It’s a place built from years of hard work, big moves, and even bigger hope.
And it’s proudly, deeply Palatka local.
From Chicago to Florida, from a food truck to a brick-and-mortar, from loss to legacy, this is our story, and the place created in Darlene’s honor.

Good Morning!! The day is finally here ❤️We are opening up our food truck today, 1/25/26 at 11am till sold out at Darlene’s. We are looking forward to seeing everyone and ask that you respect our neighbors parking and have patience with our staff.

We have been working non stop the past 24 hours and want to thank our partners for helping us make today happen. Shout out to Billy for delivering some beautiful bread from Jax, the family behind Palatka Cattle Co for supplying us with local beef, East Palatka Fruit Market for the veggies and Brian from Boardshead for getting us allllll the cheddar cheese.

The potatoes are cut, the pickles are made and the ketchup is packed. This morning we will be cooking 30 pounds of our applewood bacon, hand prepping 240 burgers, slicing 15 pounds of onions and paring out the fries! We love what we do and cannot wait to share our love of smash-burgers with you all. Thanks to everyone for the support!

We are beyond excited to see everyone and sling a whole lot of burgers. Thank you so much for all the love! your shares, comments, and likes mean the world to us. We’ve truly missed our burger crew.

We wanted to share a few quick notes to help make Sunday enjoyable for everyone:

1. Parking is limited. If you’re able to carpool with friends or family, taking a bike ride or ride a scooter, we’d really appreciate it. We want to be respectful of our neighboring businesses parking

2. Help us share the love. We want as many people as possible to enjoy a burger! You’re welcome to dine in or take your food to go, just please be mindful of freeing up seats and parking spots when you’re finished so others can join in.

3. Pickup orders. We’ll do our best to accommodate call in orders, but if things get too wild for our team, we may need to switch to dine in only.

4. Limited quantity. We’re packing the shop to the gills with burgers and house cut fries. Once they’re gone, they’re gone!

5. We’re happy to remove items, but we won’t be able to do substitutions.

Hey Facebook Fam,

As 2025 closes out, we want to take a moment to thank our community and team for the overwhelming love and support you’ve shown us this year. We didn’t think we would be in a brick & mortar this soon, and we are only here today because of this amazing community and the support of our families and friends. You dared us to dream and boy did we lol.

From plants & unique ingredients being dropped off “just because,” to stories shared across the beautiful counter Danny made for us we want to say thank you. When you choose to dine with us and spend your time and hard earned paycheck here, we are truly humbled. Thank you to every single person who has shown up. For the new friends we’ve made, the growth we’ve experienced, and the lessons we’ve learned along the way, our hearts are overflowing.

Owning a small business is not for the weak. It comes with ups and downs, the highest highs and some very challenging moments. But through it all, it has been the most rewarding adventure we’ve ever been on. I personally have never been lifted up so high by a group of people.

What started as a brunch food truck (bacon and bubbles) turned into the hottest local burger joint on wheels. We evolved to what our customers wanted, but we did it using old-school tactics. We kept our food chain local as much as possible, sourced and inspected every piece of produce that came through our doors and by caring genuinely for our community. These have always been our business building blocks.

Once we moved to Palatka, we only parked at establishments 20 miles from where we lived, with our food truck. We got to meet all of the hardworking people in this town and keep them fueled up. We all grinded side by side together. It was critical to our story. We supported small businesses and worked with local cattlemen and fruit and veggie stands. We worked with a resident husband and wife team and ordered our bread directly with them so the money went into their pocket vs taking a cut from big box companies. We built a network here. It was from that support that we were able to invest in our future here at Darlene’s.

The nourishment at our unique sandwich shop isn’t just about food, it’s about feeding the soul and creating a place where people feel welcome.

Thank you from the bottom of our hearts for going on this journey with us, from food truck to brick & mortar, in the lovely town we now proudly call home. We can’t wait to welcome you all back and share an exciting 2026 together.

It’s hard to put into words how sad we are to see Azalea City Brewing Company close its doors.
Azalea’s was the very first place that welcomed Bacon & Bubbles when we bought our house in Palatka, the first spot that said “yes,” the first place we parked, and the beginning of everything for us here. It is where we held our first two anniversaries with our food truck. It’s where we met our very first friends in town, the place that made Palatka feel like home before it ever truly was.
It’s where I found my yogi people, where community turned into family, and where I was held up by the most incredible group of humans during the hardest season of my life. The support, love, and presence that lived inside those walls changed me forever.
Azalea’s wasn’t just a brewery. It was the community hub, the place you could walk into any day, at any time, and know you’d see someone you knew. Someone who’d ask how you were doing and actually mean it. That kind of space is rare, and it is priceless.
We want to take the time to thank Andrea for donating the beautiful piece of wood from Azalea’s, that now lives on as a counter in our restaurant. That gift quite literally became part of our foundation. It was at Azalea’s where we met Danny and Patty Sheffield, who later built our bar and that very countertop from the wood Andrea so generously shared. Pieces of Azalea’s story are permanently woven into our space, and we carry that with so much pride and gratitude.
The success we’ve had in this town is deeply tied to Azalea City Brewing Co. You helped build us, supported us, and believed in us from the very beginning. Palatka is better because Azalea existed, and it will always be part of our story.
We wish Andrea and Rod nothing but the very best in the coming years. Thank you for the memories, the friendships, the safety, the laughter, the tears, and the community. Azalea’s legacy lives on in all of us who found a home there.
