Move-in isnt until Sunday and school doesn't start until Tuesday but we had a beautiful experience to get here. Highly recommend Estes Park - so beautiful! Hope to go back again sometime!

Denver To Estes!

We saw Elk, Bison, Prairie Dogs, Hawks, Wild Bunnies, Blue Jay's, and a Coyote!

Journey had been very relaxing. We're Didn't spending the night in Estes Park and I wish I had more pictures of the drive tonight. It's so beautiful here. It's like a Christmas town.

Wyoming bound to get Eli and Isaac settled in and ready to start this next chapter! 🥹❤️

It’s definitely bittersweet leaving our Taco ʻOhana behind for a couple weeks, but family comes first—and this is a BIG moment for these boys!

Thank you to everyone who has wished them luck, supported Eli’s fundraiser, and continues to support our little family business. We appreciate you more than you know. ❤️

One last homemade meal before our boy heads off to Wyoming. 🥹❤️

Homemade albóndigas, Spanish rice & beans — because sometimes comfort looks like a big plate of Mom’s cooking.

Tomorrow we begin the journey of taking Eli off to school and into this whole new chapter of his life. I know he’s excited, nervous, and probably feeling a little bit of everything… and so am I.

So tonight, I just wanted him home, around our table, eating one of those meals that hopefully tastes like home no matter how far away he goes. ❤️

I’m so proud of you, Eli. Go chase this next chapter — just don’t forget where the good food is. 😂

✈️ Our Taco Ohana is taking a little family break!

Pancho’s Tacos will be CLOSED through October 6th while we head to Wyoming to drop off our son Eli and his longtime friend Isaac as they begin the next big chapter of their lives!

These two are heading off to start their career training and experience life away from home and truly being on their own for the first time. It’s a BIG step — new place, new responsibilities, new friendships, and the beginning of building their futures. ❤️

Eli is so excited and so thankful… but definitely nervous too! 🥹 This is a huge change for him, and we know there will be a lot of growing along the way.

We also want to say a HUGE MAHALO to everyone who donated, bought tickets, shared, or supported Eli during our raffle to help get him off to school. ❤️ Your support helped make this journey possible, and both Eli and our family are incredibly grateful. Now it’s time to get him there and watch him take that next step!

Please help us wish Eli & Isaac GOOD LUCK as they start this new adventure! 🎓🙌

We’re going to miss our Taco Ohana while we’re away, but we’ll be back soon — rested, recharged, and ready to get those tacos flying again! 🌮🔥
