Filled the firebox with wood, barely cracked the door for air and went to church, and came back a little over 2 hours later and the smoker was at 225° end to end! Can’t beat that!!! I think this is gonna work out GREAT!!!

5 years ago in 2021, I began building a smoker that would give us so much more cook area, versatility, efficiency, and be a game changer for 850 Barbecue. Well 5 years later I am finally proud to announce, with the amazing dedication and help from HZX Metalworks we have finally made a dream come true! I present to you, for the first time fully built out, David and Goliath!

David is a 500 Gallon Smoker, conventional flow with a 125 gallon firebox and a 10” Stack. It has 1 door so as to be able to cook whole hogs no matter the size.

Goliath is a 1,000 Gallon Smoker, conventional flow with a 125 gallon firebox, and a 12” stack. It has 4 massive doors and one continuous grate across the entirety of the smoker from end to end.

Both smokers feature their own independent fireboxes that are built into the same frame enclosure and fully insulated with fire rated insulation. Even the doors are 2” thick and insulated, and made with 1/4” steel! This will make this smoker efficient unlike any other!

These two smokers will allow us the ability to do far more cooking all at once, and maybe allow for me to get a little more sleep! We are burning the 1,000 gallon in today so we can hopefully cook on it tomorrow!

This is a HUGE deal for us, and we cannot tell you just how excited about this we truly are. But, it is because of all of you that have made this possible. Without each of you selling us out every time we open, it may have never happened! We love you each with a special love that cannot be described. Don’t give up on us, keep coming out for that barbecue that you have come to love so much.

Before we go any further today…

Memorial Day is more than a long weekend.
It is more than cookouts, boats, and a day off work.

It is a day to remember the men and women who laid down their lives so we could live free. Every freedom we enjoy was paid for by someone who never made it home.

Today we honor the sacrifice.
We honor the courage.
We honor the families who carry that loss forever.

Freedom is not free. Never forget the cost. 🇺🇸

Thank you to everyone that came out to Gary's Brewery & Biergarten for the Blueberry Festival tonight! We had an AWESOME time! Met so many new people, and saw some familiar faces as well.
