🌞What Makes a Traditional Maryland Crab Cake?

Back in the early Chesapeake Bay crabbing days, watermen and their families spent hours picking crabs to make cakes for the long winter months. Freezing them meant they could have a golden-brown cake in the depths of February. These early cakes kept to a recipe introduced to the settlers by the Native Americans. No need for added frill, the salty-succulent crab taste made the cake a popular winter choice. Frozen cakes also bake, pan-sear, or even fry better since the compacted frozen state keeps the cake intact during the cooking. Jumbo lump, eggs, mayonnaise, crushed crackers, and bay spices create the traditional cake. Various regions around the bay adopted some nuances to this recipe. In the North, up to Pennsylvania, a heavy cream kept the cake together, which required some “setting” time before cooking. The Eastern shore whipped together eggs and flour, while the West created a “Continental Cake” with breadcrumbs or crushed crackers. With our recipe, we combine all three for a truly traditional cake. No need to divvy the cakes out slowly. We’ll pack and ship them with USA meat all winter long!

Packing a10 oz. cake requires some skill to keep it together with the larger jumbo chunks. Most chefs pack cakes with female crab meat since the larger males normally sell for crab feasts. This choice makes sense since female meat has a denser texture, better for packing. Also, the density had kept some of the salt water from seeping into the female as she foraged through the bay and tributaries. This fact gives the crab a sweeter meat for the cake. When preparing a massive jumbo cake, follow a few steps to ensure a golden-brown cake with thoroughly cooked meat throughout. Keep the cake frozen. Ironically, it cooks faster from this temperature. Cut a slab of butter and place it on the cake and then sprinkle it with Old Bay. The butter will keep the cake moist as you bake it in a preheated oven for 325 degrees F for about 20 minutes. You should notice the golden browning, the desired look in a crab cake. Then, take the cake and place it in a medium-high temperature skillet for about a minute per side. Press down with a spatula to give it a hockey puck appearance and this process also ensures a thoroughly cooked cake. Promptly serve with a baked potato and broccoli or nestled on a farmhouse salad. However, you serve it, know that you’re enjoying a cake in the Maryland Tradition.

Filled pots will crash on the wooden decks, aching with a fresh load of heavy blue crabs early in the morning. Stifle your hunger for just a few more hours. Let the crab house work Maryland Magic of sizing, steaming, and spicing of your own selected catch. 💦How do you steam live crabs?

During the warmer months, blue crabs can live through a commute across country. Of course, next day air lessens the risk of receiving a bushel filled with unlively crabs. Specialty coolers and cold packs keep the crabs at an ideal temperature so that they’re docile and conserving their energy for a “live crab delivery.” Depending on where you live, crab lovers cook their fresh catch delivered by UPS in regional ways. The South prefers boils, while the North demands steaming. Somewhere in between, a few diehards load up the grill with blue crabs. Today, we’ll discuss steaming, a sure method that keeps in the succulent juices, but avoids a water-logged crab.

Prepare your home “crab house.” Open up your crab cooler and separate live versus perished. Sometimes, a few won’t make the trip, so plan for this occurrence. The crab house crew even separate crabs this way before steaming for prepared orders. Find a stock pot and grate that will hold your quantity or plan 2 or 3 steamings, based on what you can fit reasonably in the pot.

Some like it hot! Fill the bottom of the pot with salted water and place the grate on top, not submerged, but within an inch of the water. Bring it to a boil and then with long tongs, place the crab on the grate. In between layers, season with JO Spice #2, an ideal spice that has larger flakes then Old Bay, which means the spice will stick to the crab rather than quickly washing off. For about 17 minutes per dozen, 25 for half bushel, and 30 minutes for a bushel, set the timer and cover the lid. Near the end of the time, check the crabs. Their color changes from blue to a bright orange, a good sign. Along with the obvious, a delicious sweet, cooked meat smell should omit from the pot.

Time to Crack a Few! With the same tongs, but washed thoroughly clean, remove the crabs to a serving platter. Make sure your fans sit ready with wooden mallets for the claws, seafood forks to extract hard to reach crab morsels, and hot butter or our homemade dipping sauce for a feast for the history books!

⛵️How do you Deep Fry Scallops?
North Atlantic Scallops pop with plumpness and a power-packed supply of protein, 17 grams per serving. Deep Frying scallops requires quick prep time and a systematic dipping between three bowls. First, thaw your frozen scallops and seep out any excess water with paper towels. Then in bowl 1, combine 1 cup all-purpose flour, 1 tsp. sea salt, 1 tsp. paprika, and ¼ cup grounded black pepper. In the bowl 2, whisk 2 large eggs and 3 tbsp. of whole milk. In the bowl 3, pour 1 ½ cup breadcrumbs. You’ll follow a routine of first dipping in the seasonings, then making the scallops wet with the egg-milk mix, and then finally coating them with breadcrumbs. As far as frying, place a batch of scallops, not touching, in a cast-iron skillet filled with extra virgin olive oil to about two inches deep. Achieve 350 degrees F before starting. Cook for about 2 minutes, and you’re golden! And the scallops are golden brown! With a spoon, scoop out the scallops onto paper towels. Gently roll the scallop to remove excess oils, and then plate and enjoy!

🏄Now that you removed the crabs from the cooler, how do you warm them up for a “dipping good time?”

A blue crab home delivery presents either a challenge with “live” or ease with “steamed.” Knowing this, you choose steamed, but need to follow the steps to keep the crabs fresh, tender, and delicious. First, unload the crabs into the fridge upside down on a towel until it’s time to reheat. Watching the clock and waiting for all your guests is essential since crabs lose appeal after a second, third or more reheating. Once is perfect. A custom crab cooler and gel packs ensured a refrigerated delivery; all you need to do is continue the cooling until showtime!

Once all your guests arrive, let them sit around with a tasty beverage as they watch your "crab warming-up prowess." Take a stock pot and place it on your grill’s burner. Position a grate on the bottom of the pot and fill up to the grate equal portions of beer, water, and vinegar. The beer gives the crabs a hoppiness; the water ensures tenderness; and vinegar helps keep the meat from sticking to the shells. Turn the burner to high and bring the liquid to a boil. When the sun begins beating down on the bay in full strength, the rainbows created through rippling waters will create an amazing spectacle, but does the intensity bother the blue crab? Yes. Unearthing themselves in early spring, the ten-legged crustacean begins swimming sideways in search of the perfect habitat for eelgrass snacks, along with insects, snails, oysters, clams, plankton, etc. A temperature between 70-75 degrees F gives them the best malleability through the waters with healthy oxygen levels. They prefer a peaceful setting at which they can “rule the show,” but when the weather impedes their environment, they begin searching for cooler waters.

In most cases, this means deeper waters which may cause trouble for crabbers, trying to pot a generous amount for upcoming summer feasts. In fact, even after a thunderstorm, blue crabs appear dazed and confused until they regain their bearings. Watch the water temperatures and search out crabs when the weather behaves. If the water reaches 91 degrees F, it’s lethal to the “Beautiful Swimmer that is Savory.” So, when you get your hands on a heavy bushel during the hot days of summer, crack and pick with gratitude!

Blue crabs snap viciously and put on a good show, but once out of water, they quickly perish. Crabbers use those wooden bushel baskets and wet burlap to keep the crabs as long as possible. Cooler temperatures, around 5o degrees F, also helps keep the crabs calm and tame, but they can only survive so long without bay brackish water and nourishment like oysters, eelgrass, and insects. Crabbers keep an eye on the clock and rush the crabs to the crab house. They develop a cooking schedule and map out a time that ensures a fresh crab every time! In fact, preparations become exact, like ingredients used in an award-winning culinary dish. Busheling and half-busheling cooked crabs follows the same meticulous care. Crab houses adhere to the official Chesapeake Bay Grading Scale that combines crabs into four major categories: bays (5”-6”), jimmies (5.5”-6.5”), jumbos (6”-7”), and females (5”-7”). Each group receives a steaming, timed to the quantity and spiced to a crab house’s standards. You may have recently perused a menu at the beach and noticed chef specials highlighting blue mussels. Seafood paella with white gulf shrimp, saffron rice, garden-fresh bell peppers, and Prince Edward Island mussels will feed the entire family "in the spirit of seafood." Looks like the chef may have collected a huge mussel catch. Creamy white wine garlic linguine heads the pasta choices. Slightly chewy, but oceanic fresh with a brief mushroom like undertone describes the mussel’s taste. Sauces and spices coat the mussel with complementing flavors. Garlic butter makes the mussel more tender and nuttier. White wine’s fruity, but oaky flavor finely splashes the mussel’s pallet with a salty then sweet oceanic blast. Harvested all along America’s northeastern coast and even into Central America, blue mussels win favor with chefs. Rhode Island receives the honors for USA’s ultimate blue mussel catch, while Canada’s Prince Edward Island leads the world with over 80% of cuisine’s mussels coming from this “mecca.” Even Chile harvests this bivalve mollusk for seafood recipes.

Not only do blue mussels taste exquisite in a dish, but they have some “body friendly” nutrients. If you suffer from achy joints or a high blood pressure reading, the high levels of potassium found in mussels will help alleviate it. Bursting with protein, in fact, 20 grams per a 3 oz. serving, they give you energy throughout a bustling day. The mussels’ habitat helps in developing this healthy meat.
