Okay, y’all… we can FINALLY tell you why Hillbilly’s BBQ has been a little harder to find lately. ❤️

👶💙 WE HAVE A GRANDSON!!! 💙👶

Our family welcomed sweet baby Harrison, and if you’ve noticed us taking a few extra days away from the truck lately… well, now you know exactly where we’ve been. 🥹💙

We’ve been soaking up every single second we can with the newest—and tiniest—member of the Hillbilly’s family. The BBQ will always be here, but these brand-new-baby days go by way too fast, and we weren’t about to miss them. ❤️

Thank y’all SO much for your patience, understanding, and continued support while we’ve taken a little extra family time.

Now… Gigi and Pappy have eventually gotta put that baby down and get back to slingin’ BBQ. 😂🤠 So here’s where you can find us this week!

📣 SCHEDULE UPDATE — EFFECTIVE IMMEDIATELY

Hey y’all! We wanted to give everyone a quick heads-up that Hillbilly’s BBQ will be CLOSED effective immediately through the remainder of this week.

Some unexpected family circumstances have come up that require our full attention, so we’re putting the smokers to rest for a few days and taking a little time away. ❤️

We’ll be back next week and will post our updated schedule as soon as we’re ready to roll!

We sincerely apologize to anyone who was planning to catch us this weekend and appreciate your patience and understanding with the last-minute change.

Thank y’all for always supporting our little family-owned business and understanding that sometimes, family has to come first. ❤️

Apparently selling out needs a little explaining. 😂 So let’s talk food truck logistics for a minute.

Every food truck has one thing in common: limited space. There is only so much refrigeration, storage and food that can physically fit on a truck at one time.

At Hillbilly’s, there’s another little complication…

We smoke our meats fresh. 🔥🐷🐮

When yesterday’s pork, brisket, chicken and ribs are gone, they’re GONE. We can’t run back to the kitchen, throw another brisket in the smoker and have it ready 30 minutes later. Good BBQ takes time—sometimes 12–18 hours of it.

Yesterday, we prepared for TWO events.

And y’all showed up at the FIRST one and bought damn near everything we had prepared and everything we had room to carry. 😂❤️

Did we hate having to cancel on our second stop? Absolutely. We never want to disappoint a neighborhood that is expecting us, and we sincerely meant every word of our apology yesterday.

But are we embarrassed that our customers showed up in numbers big enough to completely wipe us out?

Not even a little bit.

There are worse problems to have in business than having more customers than food. 😉

So we’ll keep smoking as much as our little truck can hold, keep learning from the crazy days, and keep being incredibly grateful that y’all continue showing up hungry.

Because at the end of the day, “SOLD OUT” means every bit of food we worked all night to prepare found somebody’s plate.

And that’s something we’ll never apologize for. ❤️🔥

🚨 BROOKS NEIGHBORHOOD — WE OWE YOU AN APOLOGY! ❤️

Unfortunately, we have some disappointing news for tonight. We had a much larger-than-anticipated order come through during our lunch service today, and it completely wiped us out.

We are officially SOLD OUT for the day, which means we will unfortunately have to cancel our stop at Brooks Neighborhood tonight. 😭

We sincerely apologize to everyone who was planning to come see us. We absolutely hate canceling—especially at the last minute—and we know some of you may have already made dinner plans around us being there.

We’re going to do our best to get Brooks Neighborhood rescheduled as soon as possible, and when we make it back, dessert is on us! ❤️🍰

Everyone who comes out and places an order at our rescheduled Brooks Neighborhood stop will receive a FREE dessert with their order as our way of saying thank you for understanding and giving us another chance to feed y’all.

We truly appreciate your patience and support, and we are so sorry for the inconvenience.

We’ll post the new date as soon as we have it worked out.

📣 IMPORTANT BOOKING UPDATE

First, we want to say THANK YOU to everyone who continues to reach out and invite Hillbilly’s BBQ to your workplaces, neighborhoods, festivals, fundraisers, private events, and communities. We truly appreciate every single booking request we receive! ❤️

As we continue to grow, though, we’ve run into a little bit of a communication problem — booking requests are currently coming in through texts, phone calls, voicemails, Facebook Messenger, and email, and unfortunately, it has become nearly impossible to keep up with every conversation happening across so many different places.

And the last thing we want is for an important message or booking request to accidentally get missed!

So, effective immediately, all new event and food truck booking inquiries will need to be submitted through one of the following:

We will no longer be accepting or managing booking requests through personal text messages, phone calls, or voicemails.

Keeping everything in these two places will allow us to stay organized, keep track of event details and dates, and most importantly, make sure we’re able to respond to you!

If you have already reached out by text or voicemail and haven’t heard back from us, please resend your request through Messenger or email so we can make sure it doesn’t get overlooked.
