📣 MICRO RELEASE 📣
We have a VERY small batch of Tanzanian Peaberry.

16 bags to be exact 😅

This small but mighty mutation produces one seed inside the coffee cherry instead of the normal two. This extra space makes the bean a little more round, hence the name peaberry. Expect a cup that is slightly brighter, sweeter, and cleaner tasting than the standard out of this rarity as only 5-10 percent of the standard harvest is classified as peaberry.

🚨NEW ROAST ALERT🚨

El Jaguar - Costa Rica
Our single orgin roast for March.

This bean has undergone honey processing.

The majority of coffee goes through wet processing where the skin of the coffee cherry, mesocarp, and pectin have all been removed. In layman’s terms: all the fruit is gone, just the cleaned inner pit of the cherry. That is what we roast, grind, drink and call coffee.

Honey processing removes the outer skin while leaving varying amounts of the mesocarp and pectin attached. It is then carefully monitored. If it’s turned too often it will dry too fast for the sugars to wprk their magic, not often enough and it will ferment excessively. However, if the processor has devoted the right time and attention the sugars residing in the cherry flesh to help develop the coffee as it is dried giving a slight sweetness and more body to the cup while keeping acidity to a minimum.

TLDR: You need a bag of this month’s origin coffee.
