This week’s specials are here—and this week’s reel is a little extra special for us. ❤️

Today, Jeremy and I are celebrating 25 years of marriage! 🥂❤️

When I was choosing the music for this week’s specials reel, there really was only one song that could go with it…

🎶 “You Had Me from Hello” by Kenny Chesney — our wedding song 25 years ago today.

If you don’t know our story, this song really does fit us perfectly. ❤️ We first met and started dating in November, almost 33 years ago, and somehow those years have flown by.

So be sure to watch the reel all the way to the end… I included a couple of pictures from our early days together and our wedding day. We seriously look like babies! 😂❤️ It’s hard to believe those two kids in those pictures are celebrating 25 years of marriage today.

Our dinner specials are on the table, and we couldn’t wait to show you a little closer look at what’s coming out of the kitchen this week!

✨ Crispy Smoked Lamb Dumplings
Smoked lamb and goat cheese–filled flour tortilla dumplings with caramelized onions and roasted garlic, pan-crisped and served over balsamic demi-glace with sautéed sweet peppers and fresh herbs.

🍑 Spinach & Peach Salad
Baby spinach, fresh sliced peaches, crumbled feta, toasted pecans and shaved red onion, finished with a peach-white balsamic vinaigrette.

🥣 Creamy Corn Chowder
Creamy corn chowder with Brussels sprouts and prosciutto.

🐟 Grilled Mahi-Mahi
Grilled mahi-mahi over creamy sweet potato risotto, smoky roasted red pepper Romesco, sautéed spinach, roasted sweet peppers and toasted almonds, finished with fresh herbs and a touch of lemon.

And I have to say… that corn chowder was phenomenal! 🤤 Rich, creamy and packed with flavor—it was one of those soups that you keep thinking about after the bowl is gone!

🍑 This week’s specials are on the table at the Cashtown Inn! 🍑

And I have to tell you… that Summer Peach & Prosciutto Salad is OUT OF THIS WORLD delicious! 🤤

I’ll admit, I was a little skeptical about putting grapefruit and peaches together. But somehow Chef made all those flavors work beautifully—the sweetness of the peaches, the bright grapefruit, salty crispy prosciutto, creamy goat cheese, toasted nuts and that bourbon-peach vinaigrette. It’s one of those dishes that you just have to try for yourself!

And there’s plenty more coming out of the kitchen this week:

🍠 Smoked Lamb & Sweet Potato Soup
A rich, comforting soup featuring smoked lamb and sweet potato.

🐊 Bourbon Peach Glazed Alligator
Crispy breaded alligator bites served over charred local sweet corn and roasted pepper relish, finished with a bourbon-peach glaze. 🌽

🫐 One More Taste of Maine! 🫐

You asked, and we had just enough left to bring it back potentially one more time! 💙

Today, we’re offering our Maine Blueberry Glaze on pancakes or French toast, made with the fresh Maine blueberries Jeremy, Wyatt & Izzy hand-picked and raked during our family trip.

We froze the blueberries to save them, so this may be the last time we offer this special!

After seeing the reel, here’s your chance to get a little closer to what’s coming out of Chef’s kitchen this week. And there are some wonderful late-summer flavors happening on the plate. 🌿

💚 Tempura Haricots Verts
Our fried green beans are back! Delicate tempura-fried haricots verts finished with fresh herbs, shaved Parmesan, cracked black pepper and a drizzle of aged balsamic reduction.

🍑 Grilled Peach & Feta Salad
Grilled peaches, baby spinach, shaved Brussels sprouts, feta cheese, toasted pecans and fresh herbs, finished with a maple bourbon vinaigrette.

🐑 Applewood Smoked Leg of Lamb
Applewood-smoked leg of lamb, slow-cooked until fork-tender and served with herb-roasted Yukon Gold potatoes and char-grilled asparagus. Finished with our house-crafted watermelon barbecue sauce, slowly reduced with aged balsamic, brown sugar and fresh mint for a sweet, smoky and herbaceous finish.
