Our Crab & Ikura Donabe is a Japanese claypot rice gently cooked in shiro dashi, tossed with napa cabbage, carrots, and gobo, and finished with crab and ikura on top.

Slow-cooked in a donabe (土鍋), the rice develops deep flavors and a lightly crisped bottom layer, while everything stays warm and gently infused throughout.

Give a warm welcome to our Director of Operations, Anna!

With over 25 years in hospitality, Anna’s career includes working alongside some of the industry’s most celebrated chefs—Iron Chef Morimoto, two Michelin-starred Chef Carlos Gaytán, and James Beard Award–winning Chef Timothy Hollingsworth.

Born and raised in the Bay Area, she moved to the East Coast in the early 2000s and has called Florida home for nearly a decade. Alongside Chef David and Ben Coutts, Anna helps elevate every detail of the Kappo Tsan experience by bringing precision, care, and refined hospitality to an unexpected corner of the city.

Together, they are building something special: an intimate dining destination where Japanese technique, thoughtful service, and an eclectic sake and wine program come together with ease.
