Chocolate tells a deeper story than sweetness alone. 🍫

For , we're highlighting our Mole Chocolate Cake, a dessert inspired by one of Mexico's most storied sauces.

Chef Caroline began with a simple question: what happens when chocolate meets the complexity of mole?

The result is a cake built around a ganache infused overnight with more than a dozen ingredients commonly found in mole, allowing each layer of flavor to slowly develop. Burnt cinnamon ice cream brings a touch of smokiness, while peanut brittle and almond cake echo the ingredients and traditions that inspired the dish.

A celebration of chocolate in all its depth and complexity.

A celebration of ceviche feels right at home at Ceiba. 🍤 calls for our Ceviche de Hamachi Verde.

Hamachi, local royal red shrimp sourced from Cape Canaveral, and Patagonian bay scallops come together with salsa verde, green apple, cucumber, jicama, and serrano for a ceviche that feels refreshing.

Our newest dessert, Niño Envuelto layers lime sponge cake with vanilla chantilly and Florida strawberry mousse, balanced by meringue and subtle savory notes from cilantro and fresno. 🍓
