Cold noodle

This time of year we like to have a little bit more acid, a little bit more chill, and a little bit more spice. We infuse a traditional dashi with the liquid from various kimchis that we make from farm vegetables throughout the year, and slice the same kimchi in a salad with charred cabbage and cucumber. The alkaline noodles are coated in a chili sesame oil and the whole thing is mixed with thai basil and cilantro, topped with royal red shrimp marinated with gochugaru and lime which firms them up just a tad. Fingerlime tops the whole situation. You want to mix it up and slurp to get a little bit of everything in each bite.
