Pumpkin spice season has arrived, even if the weather still feels like summer.

Our updated recipe shows you how to make a Pumpkin Spice Latte at home in two ways:

- Warm and creamy for cooler mornings
- Poured over ice for the late-summer heat.

Both versions let you adjust the sweetness, choose dairy or plant-based milk, and keep the coffee noticeable through the pumpkin and spices.

Not all is the same.

The variety in your cup determines everything. From the size of the cherry to the disease resistance of the tree to how much the farmer spends to keep it alive.

We walked Liwani Estate with the farmers who've grown these varieties for decades. Here's what they taught us:

- SL28: The colonial-era classic. Medium berries. Beautiful fruity sweetness. But disease-prone and expensive to manage. Developed by Scott Labs in the 1930s.

- Ruiru 11: The hybrid workhorse. Disease-resistant. Heavy yield. But it's a heavy feeder. Needs more water and fertilizer than SL28. And the cup? Less fruity, less sweet.

- Batian: The compromise. An interbreed of Ruiru 11 and SL28/SL34. Disease-resistant like Ruiru. Better sweetness than Ruiru. Larger berries. Primaries spaced farther apart. Less bushy. Lower production cost.

- SL34: The sweet spot. Larger berries than SL28. Thrives in murram soil. Same fruity characteristics as SL28 but less expensive to farm. Climate-resilient. Peter's pick for the future.

We split open two cherries from the same tree. One was ready for your roaster. The other wasn’t.

Inside every coffee cherry is a story written by the weather.

The bean on the left? Lower density. Wider center cut. Parts that never fully formed. During the milk stage (the most critical phase of development), this berry had no nitrogen.

The rain came early. The fertilizer wasn’t in the store yet. By the time the fertilizer arrived, the rain was gone.

The bean on the right? Fully fed. Dense. Uniform. During that same milk stage, it had the nitrogen it needed.

Both cherries. Same tree. Same farm. Different outcomes because of timing.

This is the invisible battle Kenyan coffee farmers fight every season. Climate change isn’t a future problem here — it’s shifting rainfall by 3–4 weeks and destroying bean development before the cherries even turn red.
