【About the Shop】
“Dragon Noodles” was established in 1999 and is based in Shimotsuma City, Ibaraki Prefecture, Japan.
Their signature dish is the “Red Dragon.” While it features an intense spiciness derived from a blend of five types of Japanese chili peppers, the flavor profile also reveals a mild, deep *umami* and a subtle sweetness.
