This 10 month house cured coppa is the most recent feature on our menu.

Coppa is a cut from the pork shoulder that chef cures with salt and red wine. It is then aged for 10 months and sliced thin.

Served over creamy mascarpone and fresh spring chives. Garnished with sweet pepper jam, olive oil and celery micro greens. Served with a slice of grilled house made rosemary focaccia.
