Joslyn Art Museum is bringing a taste of Paris to Omaha! Its latest special exhibition, "Café Society: Art and Sociability in Paris, 1855–1914," explores the rise of French cafés and their impact on modern art.

The word “confit” comes from the French verb confire, which means "to preserve." It’s a classic French cooking technique where meat is slowly cooked in its own fat at a low temperature. The result is rich, succulent, extra delicious meat that melts in your mouth.

Fun fact: Confit was originally created as a method to preserve meat, like duck or goose, for months without refrigeration by storing the cooked meat submerged under a hardened layer of fat.

While duck confit is perhaps the most common example of the modern-day technique, chefs also use it with other ingredients like garlic or tomatoes to concentrate their rich flavors.
