A Note About How We Seat & Serve
At our restaurant, we don’t follow the traditional model where guests wait at the door while empty tables sit unused. We seat you as soon as we possibly can so you can relax, settle in, and enjoy your time here. The trade‑off is that you may wait a bit longer after ordering.

Here’s why: instead of making you stand in a doorway for 45 minutes and then wait another 45 for your meal, we start frying your chicken the moment you walk in. We cook as much as we can, as fast as we can—but great chicken takes time. We can only fry about 20 chickens an hour, which serves roughly 40 people. Yet we seat more than 120 guests, so sometimes your chicken simply has to wait its turn for a skillet.

We won’t apologize for this. As Anthony Bourdain said, “Good food is worth the wait.” And chicken pan‑fried in lard, the right way, takes over 30 minutes—there’s no shortcut that preserves the quality we stand behind.

Honestly, we’d rather be seated with a drink, enjoying our family and friends, than standing shoulder‑to‑shoulder in a crowded doorway or waiting for a pager to buzz outside in the cold.
