One day my mentor told me :
Leave a batch of dough out right below the oven so they literally melt and let it over proof . Then make pizza with it and you better make it good . You’ll be a pizza master once you can do that and only then , until then “go wash the dishes” , and he laughed 🤣
The “go wash the dishes” was at every end of the sentence when I messed something up or wasn’t able to find a solution , it was a joke but a meaningful joke if you know what I mean .

His name was Paolo Illiano and to this days he is a great friend of mine and he is so happy and proud of me every time he comes to see me at the restaurant .
You might have seen him, he always comes when it s super busy - of course he does he LOVES being there at the wrong time ALWAYS 😂 , that’s what Makes him special - and he is behind the bar with me while I make him an espresso with a quite LARGE amount of baileys and ice , yes he is Italian but from a different.. category let’s say 😎

This video I dedicate it to you “uncle” Pauly , cheers to so many more years of good friendships and espresso and Baileys . 🥂
