After moving to the heart of the Mid-West, we decided to bring the biodiversity of Ecuador to the table of every American. To do so, he decided to combine health with the secrets of Ecuadorean cuisine. Alongside his mother, he has used family recipes passed through many generations and mingled them into salads and soups.
