📊 A quick behind-the-scenes look at restaurant reality

Running a small independent café means constantly adapting to changes in the food supply chain and market prices. Over the past weeks we’ve seen something that honestly shocked us.

Just recently, a 25 lb case of tomatoes — something we use daily for fresh salsas, toppings, and many of your favorite dishes like birria— went from $17–$22 per case to almost $55. Same with the beef is incredible.

That’s more than double the usual cost in a very short time.
Fresh produce, meats, dairy, eggs, cooking oil, and even packaging have all been experiencing significant price volatility due to factors like:
• supply chain fluctuations
• seasonal agriculture cycles
• transportation costs
• inflation across the food industry
