Cheesy Rotel Beef Tacos

Ingredients:

• 3 pounds ground beef
• 1–2 tablespoons olive oil (for sautéing)
• 1 medium onion, diced
• Taco seasoning (for both beef and sauce)
• 2 tablespoons butter
• ⅓ cup all-purpose flour
• 2½ cups milk
• 2 cans (10 oz each) Rotel (diced tomatoes with green chilies, undrained)
