This started with a long lunch in Greece, a wild idea to open a gyro shop back home, and seventeen years of trying to get better at feeding people.
Somewhere along the way, this oil became one of the most repeated motions in our kitchens. Into the hummus. Across the pita. In the marinades. Over the grilled vegetables. Tens of thousands of times, long before anyone ever saw it in a bottle.
Then a regular asked us, “What oil are y’all using, and where can I get it?”
So here it is.
