Topped with imported Sicilian chopped pistachios and finished with a rich Malbec w**e reduction.

Bucatini all’Amatriciana 🍝🔥

One of our house favorites at Brasa — thick, perfectly al dente bucatini tossed with crispy guanciale, San Marzano DOP tomatoes, Calabrian chile, garlic, and a touch of Pecorino Romano.

Rich, savory, spicy, and unapologetically Roman. Finished with fresh basil and plenty of Pecorino.

Tonight’s 3.5 lb. Three-Bone Parilla Smoked Short Rib disappeared faster than we could have imagined.

Slow-smoked, finished over the fire, and served with a red w**e sauce infused with Ceylon cinnamon, star anise & coriander, then finished with Sicilian pistachio and spearmint gremolata.

You asked for it. We cooked it. You cleaned us out.
