The first lie you were ever told about sushi: that it is raw fish.

It is not. Sushi is seasoned rice — that is what the word actually means. The vinegared rice is the dish, and everything on top is just what you chose to put there. Raw fish on its own has its own name: sashimi.

That is why so much of the menu never touches raw fish. Tempura, avocado, cream cheese, cooked eel, crab — rolled, topped, torched and drizzled a hundred different ways.

If raw fish is what has been keeping you away, there is a whole menu here you have never tried.
