Gang Tai Pla — A curry made from fermented fish. Yes, you read that right. It’s funky, it’s fiery, and it’s the soul of Southern Thailand. This is what fishermen’s families have been cooking for generations along the coast. The depth of flavor is unlike anything else — salty, spicy, earthy, and completely unapologetic.
