Tarte aux Abricots, Pistaches et Fleur de Lavande // Apricot, Pistachio, and Lavender Flower Tart

This photo doesn’t do this exquisite tart justice 😍 Below the apricot slices is a layer of incredible, homemade confiture d’abricot (apricot jam). Additionally, the pistachios are roasted before making the tart to enhance their flavor.

La confiture // Jam. You would be hard pressed to find a French household refrigerator that doesn’t at some point contain homemade jam - made with love by someone’s mother, grandmother, or other relative. (We’ll have more on French jams soon 😉)

Preparing for our first private party! ❤️

Chef Ben started preparation for our stuffed Loup de Mer (literally "Wolf of the Sea" in French) by rubbing it first with fennel pollen. Fennel (le fenouil) is a plant that is easily found growing wild both in the countryside of the South of France and all around the Bay Area. 🌿

Our Loup de Mer is partly inspired by a Niçois dish served during Christmastime that is very similar to the nearby Italian tradition of the Seven Fishes. It is stuffed with rosemary, thyme, and lemon.

Our beautiful, beautiful daube 🧡

Flavored subtly with orange zest, nutmeg, juniper, cloves, and herbes de Provence, our daube à la provençale is marinated for 24 hours in a whole bottle of red wine with a bouchon of cognac. We then simmer it for 6 hours to achieve its delicious harmony.

It is shown here topped with an edible nasturtium that was locally foraged in Oakland.

Announcing our new May/June Pop-Up menu! Although not mentioned below, wine pairing is included. And we have another beautiful Corsican dessert we’re excited to share with you - Flan à la Châtaigne de Corse! Our first pop-up for this period will be May 22nd! More dates and details TBA. (And do not fret if you were looking forward to our Tarte Provençale à la Tomate - we’ve decided to offer it on our late summer menu! 😉)

How beautiful is Tarte Provençale à la Tomate? 😍 Our recipe was inspired by Nice’s Michelin starred chef Dominique Le Stanc’s recipe. (He currently cooks at his restaurant ) It uses cherry tomatoes and is topped with oregano and black olives.

Did you know the Mediterranean climate in Oakland is rated the best in the United States? It’s perfect for enjoying ratatouille niçoise all year long.
