One of my favorite dishes from .
P.F. Changs was the Shrimp with Melon. I haven't eaten there in probably 20+ years. Today, I made my version of this wonderful dish. Crispy fried shrimp, candied walnuts and cantaloupe balls in a sweet sauce. Absolutely delicious! I have the ingredients for a few more meals as well as a Shrimp Stirfy for tomorrow. When visiting Jimmy's Diner don't be shy about asking for something off-menu. Recently a guest asked for Poppyseed Dressing for her salad. No problem! Another guest asked about Fried Cheese. No problem! If I have the ingredients, I'll fulfill your wishes 😀. These Cheese Sticks are made with sharp cheddar, served with our house Thousand Island Dressing and heirloom Cherokee Purple tomatoes. Our special this week is Pepper Steak with Rice. The okra is just coming on. I have avoided okra until this year, probably because of previous bad encounters. I didn't like neither the slimy texture of cut okra nor the gritty, sandpaper-like coating of raw cornmeal. I overcame both by using whole pods, cutting off the stem end, but ensuring I left just a sliver so as not to expose the inner pod. I used a food processor to make breadcrumbs whirled with cornmeal. Next, I seasoned the breadcrumb-cornmeal mixture with salt, pepper, paprika and garlic powder. (Not salting the okra pods also reduces sliminess because the salt would withdraw moisture). A dip in a buttermilk-egg mixture and then the cornmeal coating and resting for 15-20 minutes, the okra was ready to fry. Absolutely delicious! Jimmy's Diner inside . Familiar favorites. Our special this week will be Garden Shrimp Salad. Each component is seasoned separately. Romaine with olive oil and rose balsamic vinegar. Heirloom tomatoes with salt, pepper and sugar. Fresh corn with pepper. Onions with white w**e vinegar and salt. Zucchini and yellow squash with lime and oregano. Served with Jimmy's Dressing and our crispy Hushpuppies. Oh, zucchini! How to make you more interesting? Let me count the ways.

Stewed Zucchini with Alaskan Po***ck is flavored with onions, tomatoes, garlic, paprika, Kashmiri chile powder (color and flavor, no heat), olive oil and fresh basil. Zucchini Pico gets its piquancy from fresh cilantro and a whole lemon. Fried Zucchini is first salted and then coated with flour, egg and bread crumbs. It is served with Garlic Scape Pesto.
