Good things happen when one forgets.
I warmed some fresh, whole milk late on Friday and then forgot about it. On Saturday, after sitting at room temperature, a large mass had formed in the bowl. Intrigued, I put it in a strainer lined with cheesecloth. The mass crumbled into curds like cottage cheese! I added a little salt and, viola, cottage cheese -- or more like farmer's cheese because the curds are softer. It's easier than the recipe for Cottage Cheese in my book, "MillRose - A Century of Family, Farm and Food."
