Two years ago, we picked up an empty trailer with less than a single clue about what we were getting into. That same week, we worked our first paying gig with a Blackstone poorly welded (but still holding) to the side of my smoker.

In the beginning, we were working out of a Target parking lot and trying so hard to book gigs. We were green as could be and had no idea what lay ahead. A year later, we opened our second trailer. Now, two years in, our business has taken a huge leap into corporate catering.

I’m grateful to my old coworkers who unknowingly taste-tested everything I brought to work and gave me the honest feedback I needed. And I’m especially grateful to our staff. You’ve shown up through long days, busy services, equipment problems, and all the growing pains that come with building this thing. We wouldn’t have made it this far without you.

It’s pretty wild to think back to those days in the Target parking lot. Thank you for being part of the adventure. Here’s to year three.

Our quesadillas are loaded with our Oaxaca, Asadero & cheddar cheese blend and finished with that crispy cheese crust you know and love. 🤤

And in case you needed even more convincing… our fries are cooked in beef tallow, and our tortillas don’t contain bleached flour or hydrogenated oils.

So basically it’s healthy, right? 😂

A little Hilltop schedule update! 🌵🌮

With the extreme heat and ongoing construction around Hilltop, we’re adjusting our hours for the time being.

Hilltop will be CLOSED Tuesdays & Wednesdays and OPEN Thursday–Monday.

As the heat eases and construction wraps up, we’ll adjust our hours accordingly.

Our other truck is still on the move throughout the week, so follow our page to see where you can find us!

WE’RE GROWING — FAST. 🌵

Baja Quesadilla is looking for great people to grow with us!

What started with one truck is quickly becoming something much bigger. We now have our permanent location at Hilltop, another truck rotating between Truck Yard Alliance, The Colony & Richardson, and we just added a weekly catering partnership with Fidelity — with a lot more growth ahead.

We’re building a team and culture around a pretty simple idea:

Work hard. Make great food. Have fun. Feed your adventure.

We believe work should give you the opportunity to grow, but also the flexibility to get out and enjoy life. We want people who are dependable, motivated, and excited to be part of what we’re building.
