Red wine braised short rib benedicts!
The short rib was rubbed and marinated for two days, seared at a high temperature, and then braised in our secret braising liquid for several hours at a nice, slow and low temperature. The result is delicious, tender short ribs for benedicts!
Chicken "pot pie" aka Chicken Gravy!
Arnold's Meats (local meat facility in chicopee ma) bone in thighs - Seasoned and roasted with the bones in, we plucked the meat and used the bones and skin to build a stock. Sweated Mire Poix (aka Carrots, celery, and onions) in butteR, added some garlic, then used flour to create the roux. From there we added the fresh chicken stock, brought it to a boil and then finished with our tasty plucked thigh meat! DEEE-LISH-US! A great contrast to our already popular sausage gravy! Comes with a split biscuit, home fries, and two eggs any style!
We also have burgers listed on the special sheet, when the new menu comes out we will have a build your own burger section, similar to the list of omelet ingredients we feature. Please, dont be shy about asking for the burgers! We always carry them now!
