Good afternoon everyone and happy Saturday!
I, Drew, wanted to take a moment to talk about a few things.
First and foremost, today marks 3 whole years of being in business, marking the anniversary of when we started out of a rented kitchen, before the bus was even a thought. That is absolutely unbelievable to me..
Three and a half years ago, when I was working at the country club, I never could have dreamed that I would build the brand, following, and support system that I have today. I never thought I would be able to work full-time for myself. I never thought people would love my food the way you guys do.
Truthfully, I still doubt myself every single day. I still question whether my food is good enough, and I won’t lie, there have been plenty of times where I’ve been ready to throw in the towel.
But there isn’t anyone else to thank for us still being here other than every single one of you. Every share. Every tag. Every recommendation. Every private event booking. Every person who comes out and gets dinner from us. Every person who tells their friends about us.
Thank you. From the absolute bottom of my heart.
I also wanted to take a moment while I have most of your attention to talk about cancellations…
I need everyone to understand that, at the end of the day, I am still a one-man show. Yes, I have a full-time cook now, and I am incredibly thankful for him, but that doesn’t even begin to scratch the surface of everything that goes into running this business.
I wear at least five different job hats every single day.
Some days, I’ll be the first to admit, I complain. This business can be extremely stressful, especially now with a newborn at home and not having my co-owner/wife helping me with things. But no matter how stressful it gets, I do my absolute best to show up, serve the best food I possibly can, and put smiles on your faces and in your bellies.
I know when we cancel a shift, it can be an inconvenience. I completely understand that. But please understand that I never want to cancel.
I don’t cancel because I don’t feel like working. I don’t cancel because I don’t want to make money. I certainly don’t cancel because I don’t want to see you guys.
This is how I support my family. I want to be there just as much as you want us there.
Nine times out of ten, when we have to cancel, it is because something happened that is completely out of my control. Whether it’s mechanical issues, staffing, weather, personal emergencies, or something else that makes it impossible for us to safely or reasonably operate.
I promise you, I don’t take those decisions lightly.
So as we celebrate three years today, I just want to say thank you for sticking with us through the good days, the stressful days, the packed days, the slow days, the last-minute changes, and everything in between.
Three years in business is something I never thought I’d accomplish.
The fact that we’re still here, still growing, still feeding thousands of people, and still getting to do what we love every day is because of you.
