May Explorer Series — El Vergel Estate

There’s a shift that happens this time of year. The mornings feel a little softer, the days stretch out, and everything starts to open up again. This coffee lands right in that moment.

Sourced from El Vergel Estate in Tolima, Colombia, this Red & Yellow Caturra lot from Elías and Shady Bayter is an excellent example of what careful processing can do when it’s done right.

A natural anaerobic process pulls forward ripe plum and guava right away, while still keeping the cup structured and balanced. Chocolate and red fruit bring it back to center, and a citrusy tangerine finish keeps everything bright and clean.

It’s a coffee that feels like the season turning. Something new, but easy to settle into.

April Explorer Series — Miel Rosa

Spring showed up in a cup. Blueberry, citrus, tangerine, and a smooth hazelnut cream finish. It’s bright, clean, and right on time after a long winter.

Grown at El Vergel Estate in Tolima by Elías & Shady Bayter, this Pink Borbon honey process is all about precision and intention. You can taste it in every sip. Fruit-forward without going over the top. Structured, but easy to drink. The kind of coffee that resets your morning.

Typical roasting day. Up early with the dogs, a couple quick meetings, then a mad dash to the roastery and back before Gracie decides the house needs a full interior redesign. Roast the coffee, get back home, save the furniture. Just another day in the life.
